All foods increase saliva production, and since saliva contains buffering chemicals it helps stabilize the pH near 7 (equivalent) in the mouth. Foods rich in fiber help increase salivary flow, and a large piece of fiber such as a slice of celery can push saliva into food stuck in the cracks of the teeth where 80% of cavities occur, or to reduce the concentration of carbohydrates such as sugar, neutralizing acids and retarding teeth.
